Harbison is a soft-ripened cheese with a rustic, bloomy rind. Young cheeses are wrapped in strips of spruce cambium, the tree’s inner bark layer, harvested from the woodlands of Jasper Hill. The spoonable texture begins to develop in our vaults, though the paste continues to soften on the way to market. Harbison is woodsy and sweet, balanced with lemon, mustard, and vegetal flavors.

We are crazy for this avocado-based salsa made by a tiny local company in Norwalk. Maria delivers to our store weekly and offers her salsa in mild, medium, and hot.
Connecticut resident Steve Green launched his sauce after his friends and family said his recipe was “better than anything they buy in the store.”
“Our manufacturer makes The Rowayton Sauce Co. taste the same as when I cook the marinara at home,” says Green. “They nailed it.”
