Puglia is a flat, fertile, sun soaked region in southern Italy. Puglia’s iron rich soil makes it one of the most productive agricultural regions in Italy. Puglia has the longest coastline of any region in mainland Italy and is often referred to as ‘Italy’s undiscovered coast’. Puglia produces olive oil (more than any other region in Italy), wine, tomatoes, artichokes and wheat. Puglia is also full of remarkable historical ruins, cathedrals, Baroque cities, harbors and picturesque villages like Alberobello (capital of the famous trulli buildings).
Puglia’s comforting country cuisine may not be as famous as that of some other Italian regions, but it is full of locally sourced goodness. Local produce includes durum wheat, tomatoes, artichokes, beans, courgettes, fennel, peppers and onions. The coastline and farming tradition bring lots of seafood, beef and lamb to the table On the tour, you’ll enjoy traditional dishes from set menus featuring a variety of fresh, local, in season ingredients. Inclusive in the trip are all breakfasts, three lunches and nine dinners (including wine).

Guide and co-owner of aTTavola, Gioacchino Passalacqua, is an artisanal Italian food exporter, gastronome and native Sicilian who divides his time between Sicily, Italy and New York. As a native Mediterranean, Gioacchino has developed relationships with food producers, restaurateurs, olive oil companies, chocolatiers, vintners and confectioners. He has traveled the world in his business as an importer/exporter, taking part in food shows from Paris and San Francisco to Chicago and New York City.
