CAST IRON CHICKEN

This is the most delicious way to cook a whole chicken. The skin is crisp and the chicken is moist and super juicy! We eat this at least once a week in our house. The chicken is so flavorful you do not need to add anything except salt and pepper.  

INGREDIENTS

  • - 1 Whole Chicken (2.5-3 lb. average)
  • - Olive Oil
  • - Kosher Salt
  • - Freshly Ground Pepper

Directions

  1. Heat oven to 450 degrees. Pour a couple of tablespoons of olive oil in the bottom of your cast iron skillet and place in the oven to heat.
  2. Remove the giblets and neck from inside the whole chicken. Coat chicken with olive oil, then salt and pepper both the inside and outside of the bird.
  3. When oven reaches 450 degrees, place chicken in hot cast iron skillet. Roast for 30 minutes and turn oven off. Leave chicken in oven for an additional 30 minutes.
  4. Remove from oven and let sit for 10 minutes before carving.
